I just have a couple quick questions.

1) How do I (if possible) set the default email from within a service request to the Admin sending it instead of the default address. I currently have to choose myself from the dropdown.

2) is there a way to add a Signature to the email being sent from within a Service Request?

Re your first question, currently, the option to set your email account as a default email from within the service request is not supported.
I will add this as a Feature Request.

You can create your own signature that will appear in your all messages.
In order to do this, go to Preferences -- > My Settings.
